It is such a fun coffee that if you close your eyes you can envision yourself swaying on a hammock in South America. 農園報告: サンイグナシオ市の中心地から車で20分ほど山手へ上り、未舗装のでこぼこ道を少し進んだところにドンハイメ農園はあります。 この土地を親から譲り受けたとき、近隣に有名なコーヒー生産者が多か ったことからコーヒー栽培を始めたハイメさん。 5ヘクタールほどの農園にパカス、 パカマラ、 SL-28、 ゲイシャが区画を分けて栽培されて います。 とても研究熱心で、ウォッシュド、ハニー、ナチュラル全ての プロセスで様々な工夫を施し、 多くのマイクロロットを生産されてい ます。さらに自宅の屋上に建てられた乾燥場には、屋根に遮光率の異なるカーテンが張られ、ロットに合わせて乾燥のスピードをコント ロールするという興味深い取り組みもされています。 Farm Report: About 20 minutes drive from the center of San Ignacio to the mountainous region, and a little further down the dirt road, Don Jaime Farm is located. When he took over this land from his parents, Jaime started growing coffee because there were many famous coffee producers in the neighborhood. He has 5 hectares of farms with Pacas, Pacamara, SL-28 and Geisha cultivated in separate plots. He is very research enthusiastic and has produced many micro lots with various ingenuity in his process of washed, honey and natural. In addition, the drying area built on the roof of his house has curtains with different shading rates on the roof, and there is an interesting effort to control the speed of drying according to the lot.
